Pressing the Convert button on your toolbar will begin the conversion of all of the PDF documents that you've added to your PDF Documents List. As text files are created they will be added to the Text Files List. The overall progress will be shown in the progress bar at the bottom of the main window. The conversion process can be cancelled at any time by pressing the Cancel button.
It is also possible to convert a selected PDF document, rather than the entire list.
